Ingredients
  

  • 2 fresh salmon fillets or 1 can of salmon, drained
  • 4 cups mixed greens spinach, arugula, or lettuce
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/4 red onion thinly sliced
  • Dressing:
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 1 teaspoon Dijon mustard
