Equipment

  • Large Pot: For boiling the pasta.
  • Colander: For draining the cooked pasta.
  • Mixing Bowl: For combining the salad ingredients.

  • Cutting Board and Knife: For chopping vegetables.
  • Whisk: For mixing the dressing.

Ingredients
  

  • 12 ounces pasta rotini, penne, or farfalle
  • 1 bell pepper chopped
  • 1 cucumber chopped
  • 1/2 cup cherry tomatoes halved
  • 1/4 red onion thinly sliced
  • 1/2 cup olives black or green, sliced
  • 1 cup feta cheese crumbled
  • Dressing:
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Herbs:
  • 1/4 cup fresh basil parsley, or oregano, chopped

Instructions
 

  • Cook pasta according to package instructions; drain and rinse under cold water.
  • Chop the vegetables and set aside.
  • Whisk together olive oil, vinegar, mustard, salt, and pepper for the dressing.
  • Combine pasta, vegetables, olives, and feta in a mixing bowl.
  • Pour the dressing over the salad and toss gently.
  • Chill for at least 30 minutes before serving.
