Eggplant Parmesan

Eggplant Parmesan is a rich and flavorful dish that's perfect for any occasion. With layers of crispy eggplant, marinara, and cheese, it’s sure to be a favorite among both vegetarians and meat-lovers alike!

Ingredients
  

  • Eggplant Parmesan
  • 2 large eggplants
  • Salt for sweating eggplant
  • 1 cup flour
  • 3 large eggs beaten
  • 2 cups breadcrumbs
  • 4 cups marinara sauce
  • 2 cups mozzarella cheese shredded
  • 1 cup Parmesan cheese grated
  • Olive oil for frying

Instructions
 

  • Prepare the Eggplant
  • Slice eggplant, sprinkle with salt, and let sit for 30 minutes.
  • Bread the Eggplant
  • Set up three bowls for flour, beaten eggs, and breadcrumbs. Dip each slice in flour, egg, and then breadcrumbs.
  • Fry the Eggplant
  • Heat olive oil in a skillet and fry breaded eggplant slices until golden brown.
  • Layer the Dish
  • In a baking dish, layer marinara, fried eggplant, mozzarella, and Parmesan. Repeat until ingredients are used.
  • Bake the Dish
  • Cover with foil and bake at 375°F for 25 minutes, then remove foil and bake for an additional 15-20 minutes.
  • Cool and Serve
  • Let cool for 10 minutes before slicing and serving.
