Ingredients
  

  • 4 cups fresh corn kernels about 4 ears of corn or 2 cans of corn, drained
  • 1 bell pepper diced
  • 1/4 red onion finely chopped
  • 1 small jalapeño finely chopped (optional)
  • Dressing:
  • Juice of 2 limes
  • 1/4 cup olive oil
